AN INSURANCE salesman, David Porter, visited a Memphis meat-packing factory in 1965. He tried to sell a policy to one of the meat-packers, a big man. As the two talked, it transpired they both harboured dreams of song-writing. The meat-packer had already auditioned three times for Stax Records, with little success.
